pj64 for it's ability to use user-made texture packs.
Higher res textures for mario 64
Cell shader mod for zelda64
PJ64 for playing on your own.
1964 for playing online against people. It's much more stable and has a cool lobby.

I thought Project 64 Was for mac as well. Anyway if you have a Mac. there is this emulator that allows you to combine all the emulators you have into one client. So when you open it it automatically opens the right emulator. Forget what its called though.
