Wagyu steak

First of all, what is Wagyu? This is Wagyu:



Mmm yummy. This is considered to be the best kind of beef in many Asian countries (most notably Japan), and is also popular in the US and Europe. The beef is known for its marbling fat patterns, its flavor, tenderness, and overall drool factor.



Why do I bring this up? Because I am fascinated with how Wagyu cattle are raised. These cows spend most of their lives not moving. They are confined in small pens at all times and are hand-fed with commercial feeds. Sometimes, because of the heat, they lose their appetite, so they are fed beer to get their stomachs going again.

Ok, it sounds like a good life. Not moving, drinking beer, fed by hand. But from birth to death that's all they do. "Fattened up for the slaughter" in its most literal sense. And because of the small pens and having to stand all day, they often get swollen joints, and have to lie in their own ****.

When I first heard about this I was a little shocked. Animal Cruelty! and all that. But then I think... it's just the natural progression of farming animals isn't it? We raise them, we kill them, we eat them. What does it matter what they have to go through if they end up on our plates anyway?

And then I think... what if cows can talk? Will that make all the difference?

Then again... I want to taste Wagyu steak. With extra helpings of gravy, and sake.

I think massive amounts of gravy would spoil the flavor. I had steak in Japan and it was butter smooth and tender. It was amazing. Wasn't wagyu or kobe but, man, was it good. the only things that were offered to put on top were a special mustard or butter. =]
