your saying a newb can do it hey? Well first they would need to install Linux. Then install drivers for their wireless card to enable monitor mode. Then setup kismet or similar to sniff and save packet dumps. Then they would need to know how to view all the packets... maybe use ethereal. For someone to do all that, it would hardly be fair to call them a newb, anyway, Then they would have to know how to interpret the packet data, not everything is in plain text, and nor are the passwords. Ive really only seen standard FTP and SMTP passwords in plain text and a few others.
With no encryption ANYONE even a nub can sniff the airwaves for packets and if there not encrypted they can see everything your doing.
